I'd LOVE to see WIPEOUT PURE and EXIT! brought over from the PSP- EXIT especially would be a perfect fit.
everyone seems to be forgetting about Twisted Metal. That game would work perfectly on the iDevice. Tilt controls could be used for steering, while acceleration and stop/reverse could be done on screen, along with weapon changing and firing. Also, Phoenix Wright has proven to work well on a touch screen interface. Many DS games would work for ports, possibly Dimentium which is one of my favorite DS shooters, would work perfectly on an iDevice. One more thing that the iDevice needs is a great Call of Duty game. 4 and World at War on the DS are great candidates, along with the one for the N-Gage. One more I think the iDevice could really use is a good XBLA port. Sure, we have MI Special Edition, but we need something more action-y like Dishwasher which looked insane and seemed like it would work fine on an iDevice.

Think tales of phantasia would work a lot better brah. Would shell out the big bucks for that one. (Even though symphonia is one of my favorite games of all time, I would sense major issues on a idevice.)
Half-life!!!! Half life 1 would be awesome as long as they could get the controls right and cause half life is old they won't be struggling with the graphics, half life 2 will be too much. P.S PORTAL!! I really hope valve let them finish the portal clone, it looks awesome! PP.S: some kind of 3D platformer I.e Ratchet & Clank is my favourite.
I would love to see Braid. It would also be ever so lovley to have a real 2D fighting game like Street Fighter.

Wanted games C&C, Sega's old Jungle Strike(Genesis), Dune...There's an old cheap PC game I used to play that I thought would be great on the iPhone too....you fly a helicopter and rescue injured people in Vietnam....think of a 1st person "Chopper" game.
