Have you played any of Kemco's RPGs? Or maybe Doom & Destiny (which is one of the best in the genre)?

These games are quite similar to the core Final Fantasy game mechanics. FF titles are known for their massive exploration, deep character customization, and some of the best feels in its respective story arcs.

VI is the easiest FF game there is, if you ask me.

Well, VI seems to be one of the three most popular entries in the series based on the buzz I've encountered over the years, the others being VII and X, neither of which are available on the iPhone.

The version of IV on ios, like the DS version its based on, has enemies with jacked-up stats. And yes, that's over the original Japanese version, not just the Easytype that most Americans were introduced to. Even if my input were instantaneous, a lot of monster parties were too fast and/or hit too hard that you have to grind more than the structure of that game warrants. Sure, it's simpler than FF VI because you don't have many character customization choices, but even if you played a challenge run of VI where you didn't even use Espers, it's easier than most other FF games. However, what customization choices there are in IV, by way of the augment system or whatever its called, can be very elusive in how to do right. In VI it might take an expert to optimize the stat boosts from Espers, but nothing in the game remotely warrants doing that whereas dumping skills on the wrong characters in FFIV have more significant results. If we were talking about FFVIII, I'd agree that its a lousy starter because it's too complicated albeit not a hard entry in the series on the whole, but VI is another story.

It doesn't matter what someone plays first, but newbie or not, FFVI is the easiest choice. Going purely on simplicity, all the FFs before IV beat it, so it's not polarizing in that regard.

Drakerider has a different combat system, but shares most of the other mechanics of a typical Final Fantasy title.

Drakerider's combat system is more a 1v1 system, while the controls are quite unique for it. I actually really like the innovations they did on this one. In some ways, it did remind me of Digimon's first RPG game on the PSX, where you dont have complete control over your pet, but can greatly influence it.
