If my other computer has none of my music or apps, can i still back-up my iPod? Is it like a sync and might possibly delete my music and apps?

Not a backup. A sync will delete everything, but backing up the data won't remove anything

I have a computer which has my apps and music, but i don't have it right now. I'm going to do this on my other computer which doesn't have anything except some of my music. So nothing will be deleted right?

No, it shouldn't, just be logged into the same iTunes account and it should ask if you want to transfer everything over and make a backup. According the the MacRumor forums.
