If I hand the phone to a kid/someone they might accidentally press an app for too long and press the x and delete the app and all my saved data. I can't seem to find the answer on google.
Hmm, it seems if I am jailbroken there's a lot I can do. Is there a way to save the game datas on the computer not just the iphone so I can sync it back? It seems like this should be doable but I can't seem to find it.

If your jailbroken you can save app game data individually and put it on your computer as well. iTunes backs up game save data, but in order to get your data back, you have ot do a full restore form backup to get the game data back
Yes, backups DO save apps data. Recently I had to reset my phone because of an error during synching... it wasn't rebooting anymore. After the reset I thought I lost all my game saves, but then I used the backup, reinstalled the apps and they were all there. Now I understand why backups require all that time.
