It's definately possible, as I had AoE for my Windows Mobile PDA 3 or 4 years ago, and given the touch controls and quadruple resolution of the iPad/iphone4 I think it would be excellent! Then again Microsoft owns Ensemble Studios (right?) so I don know how they feel about an iPhone port.
Opinion. However, a game of this caliber is clearly possible as long as someone is willing to develop it. Porting of AoE2 sounds very doubtful however.

red conquest is the only rts on the idevice that stays true to what I've always thought to be the core element of a rts: complete capability of micromanaging your army with amazing, precise controls.
